Ingredients
- 2 tablespoons vegetable oil
- 1 medium onion, chopped
- 1 green bell pepper, chopped
- 5 cloves garlic, chopped
- 2 medium roma tomatoes, chopped
- 1/4 teaspoon ground cuming
- 1/2 teaspoon dried oregano
- salt and pepper
- 1 small 8 oz. can tomato sauce
How To Make sofrito - the beginning of a great dish

Step 1Heat oil to medium-high heat and add onion and green pepper and cook until tender. Add the garlic, being careful not to burn the garlic.

Step 2Season the onion mixture with salt, pepper, oregano and cumin. Stir well and continue cooking until vegetables break down and become soft.

Step 3Add the tomatoes and cook until all liquid is released and then gradually add the tomato sauce. Simmer until the sauce turns nice and red. Adjust seasonings to your taste. Puree the mixture in a blender until smooth.

Step 4Add the sauce to your favorite meat, poultry or vegetable dish.
