  • 3 1/4 cups milk
  • 3 tablespoons butter, plus
  • 1 1/2 teaspoons butter
  • 1/2 cup all purpose flour
  • 2 1/2 cups shredded cheese (cheddar, or a blend of american and jack)

How To Make school cafeteria cheese sauce

  • Step 1
    Heat milk over medium heat until just hot.
  • Step 2
    In a large sauce pan, melt butter. Add flour and whisk until smooth.
  • Step 3
    Add hot milk, stirring constantly.
  • Step 4
    Add shredded cheese. Cook for 12-15 minutes, stirring frequently, until smooth and thick.
