- 3 1/4 cups milk
- 3 tablespoons butter, plus
- 1 1/2 teaspoons butter
- 1/2 cup all purpose flour
- 2 1/2 cups shredded cheese (cheddar, or a blend of american and jack)

Step 1Heat milk over medium heat until just hot.

Step 2In a large sauce pan, melt butter. Add flour and whisk until smooth.

Step 3Add hot milk, stirring constantly.

Step 4Add shredded cheese. Cook for 12-15 minutes, stirring frequently, until smooth and thick.
