This is a great sauce for your Superbowl chicken wings, and about as close to the original Buffalo, New York recipe, as you can get. It has an amazing kick, and gives your wings an unbelievable taste. One of the secrets is using dehydrated onions… they give the sauce a umami taste, and makes it awesome. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 2/3 cup frank’s hot sauce
  • 1/2 cup sweet butter, unsalted
  • 1 1/2 tablespoons apple-cider vinegar, i think it tastes better than using white vinegar
  • 1/2 teaspoon worcester sauce, homemade, if possible
  • 1 tablespoon dehydrated onions, ground to a powder
  • 1 pinch salt, kosher variety, or to taste
  • 1 pinch ground cayenne pepper, or to taste

    PREP/PREPARE
  • Step 2
    Chef’s Note: You can use another brand of hot sauce; however, it will not taste the same.
  • Step 3
    Gather your Ingredients (mise en place).
  • Step 4
    Add all the ingredients to a saucepan over medium-low heat.
  • Step 5
    Whisk the ingredients, until they come to a simmer.
  • Step 6
    Remove from the heat, and store in a non-reactive (glass) container, until ready for use.

    PLATE/PRESENT

    To use, reheat, and then pour over a batch of chicken wings. I do not like to drown the wings in the sauce, but just put enough on them to coat. Then, serve the additional sauce on the side. Enjoy.
