I made some fettuccini last night for a night out by the pond, and whipped up a fantastic sauce… AWESOME SAUCE. Creamy in nature with a slight tang from the buttermilk. Plus, I added sautéed mushrooms, and ground Italian sausage to boot… It is a killer. I have my own spice combination; however, if you have a few “special” spices that you cannot live without… throw them in. The more the merrier. So, you ready… Let’s get into the kitchen

Ingredients

  • PLAN/PURCHASE
  • 4 ounces italian sausage, ground, hot or mild, your choice
  • 2 tablespoons sweet butter, unsalted
  • 1 tablespoon olive oil, extra virgin
  • 4 ounces white, or brown button mushrooms
  • 1 tablespoon flour, all-purpose variety
  • 1/2 cup heavy cream
  • 1/2 cup buttermilk
  • 1/2 cup parmesan cheese, freshly grated
  • 1/2 cup sharp white cheddar cheese, freshly grated
  • 1/4 teaspoon salt, kosher variety
  • 1/4 teaspoon hungarian paprika
  • 1/8 - white pepper, freshly ground
  • 1 pinch cayenne pepper

  • Step 1
    PREP/PREPARE
  • Step 2
    Gather your Ingredients (mise en place).
  • Step 3
    Add the ground sausage to a skillet over medium heat.
  • Step 4
    Cook until all the pink is removed, about 5 – 7 minutes. Drain on paper towels, and reserve.
  • Step 5
    Clean, stem, and slice the mushrooms.
  • Step 6
    Wipe out the skillet with a paper towel, then add the butter, and oil to a pan over medium heat.
  • Step 7
    Add the mushrooms, a pinch of salt, and the flour. Cook the mushrooms until they begin to brown, about 5 – 7 minutes, and reserve.
  • Step 8
    Add the cream, buttermilk, both cheeses, salt, pepper paprika, and cayenne to a sauce pan over medium-low heat.
  • Step 9
    Slowly bring the pan up to heat, and stir until the cheeses melt into the cream and buttermilk, about 12 – 15 minutes.
  • Step 10
    Chef’s Note: Keep the heat low, and never let the sauce come to a boil.
  • Step 11
    Add the mushrooms, and incorporate it into the sauce.
  • Step 12
    Add the sausage.
  • Step 13
    Stir to combine all the ingredients, and allow the sauce to come back to heat, about 2 - 3 minutes.

    Serve over your favorite pasta, and do not forget some fresh crusty bread. Enjoy.
