sauce essentials: down & dirty alfredo sauce

This is a quick alfredo sauce with a few extras added in to make it yummy. I love to combine it with some homemade pasta, and then add some shrimp or chicken… yummy. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 4 tablespoons sweet butter, unsalted
  • 8 ounces cream cheese, softened
  • 3 cloves baked garlic, smashed
  • 1 teaspoon oregano, dried variety
  • 2 cups half & half
  • 3 ounces parmesan cheese
  • 3 ounces pecorino romano
  • 1/2 teaspoon white pepper, freshly ground, or to taste
  • 1 pinch nutmeg, freshly ground, or to taste
  • - salt, kosher variety, to taste

How To Make sauce essentials: down & dirty alfredo sauce

  • Step 1
    PREP/PREPARE
  • Step 2
    Gather your Ingredients (mise en place).
  • Step 3
    Add the butter to a saucepan over medium-low heat.
  • Step 4
    Allow to cook until the foaming subsides.
  • Step 5
    Add the softened cream cheese, garlic, and oregano to the saucepan.
  • Step 6
    Stir until the cheese and butter are incorporated, about 3 – 5 minutes.

    Chef’s Note: At this point, you might notice a slight separation in the butter and cream cheese… No worries, it will come together nicely as the recipe progresses.

    Add the half & half, one half cup at a time.
  • Step 9
    Chef’s Tip: Don’t add any additional half & half until the previous amount is combined with the cream cheese and butter. And use a whisk to smooth out the mixture.
  • Step 10
    Add the parmesan and pecorino, and whisk to combine.
  • Step 11
    Finish with the white pepper, nutmeg, and salt.

    Chef’s Note: Don’t forget to do a final tasting, and adjust the seasonings accordingly.

    Chef’s Note: The longer the sauce cooks; the thicker it will become.

    Chef’s Tip: If the sauce becomes too thick, thin it down with additional half & half.
