salad essentials: spicy dressing – two ways

These are the two dressings that I will be serving tomorrow at a 2:00p Do. I am making a pasta and cod dish with a lemon cream sauce (yet to work out all the details but pushing on), freshly baked rolls and a side salad. And, wine, there will always be wine. These dressing have a lot of applications other than a simple salad, and I will give you some suggestions later. So, you ready… Let’s get into the kitchen.

Ingredients For salad essentials: spicy dressing – two ways

  • PLAN/PURCHASE
  • SPICY/VINEGARITTE DRESSING
  • 1/4 c
    oil, more on this later
  • 2 Tbsp
    apple cider vinegar
  • 2 - 3 tsp
    fresh cover honey
  • 2 tsp
    hot sauce, i prefer frank’s, or to taste
  • 1 tsp
    dijon mustard
  • salt, kosher variety, fine grind, to taste
  • black pepper, freshly ground, to taste
  • SPICY/ CREAMY DRESSING
  • 1/2 c
    mayonnaise, i prefer duke’s
  • 2 Tbsp
    oil, more on this later
  • 2 Tbsp
    red wine, dry variety
  • 1 - 2 Tbsp
    hot sauce, i prefer frank’s
  • 1/2 tsp
    garlic powder
  • 1 tsp
    white sugar, granulated variety
  • salt, kosher variety, fine grind, to taste
  • black pepper, freshly ground, to taste

    You will need a whisk and a bowl to make this recipe. And, some good non-reactive jars to store it in.

    You want a lite oil for these two recipes. I like grapeseed, and even vegetable oil would work nicely. If you want a hint of additional flavor, you might want to try a lite olive oil.

    Gather your ingredients (mise en place).

    In both recipes simply combine the ingredients into a bowl and whisk until nice and smooth.

    After whisking season with a bit of salt and pepper, to taste.

    Store in tightly sealed non-reactive containers in the fridge, until needed.

    Serving Suggestions On a salad with some yummy sauteed chicken. Use as a spread on a chicken or turkey sandwich. Use as a chicken marinade for added flavor. It is an excellent dip for veggies and chicken tenders. Or use as a dressing for a chicken Sharma. Enjoy.
