Ingredients For red onion relish

1 1/2 lbmedium-sized purple onions, sliced

1/2 csugar

1/4 cvegetable oil

2 Tbspvegetable oil

1 tspsalt

1/2 tspfreshly ground black pepper

1/2 cred wine vinegar or sherry vinegar (5% acidity)

1/2 csweet red vermouth

2 Tbspred currant jelly
How To Make red onion relish

1Combine the first 5 ingredients in a large Dutch oven; stir well. Cover and cook over low heat for 40 minutes, stirring occasionally.

2Add vinegar, vermouth, and jelly. Stir well. Bring to a boil; reduce heat, and simmer, uncovered 30 to 35 minutes or until slightly thickened, stirring occasionally.

3Remove from heat and let cool. Store in an airtight container in the refrigerator.
