An old recipe. I think this would be great topping a good meatloaf just before baking it.

Ingredients

  • 12 - bell peppers (6 green, 6 red), seeded, chopped fine
  • 6 - onions, chopped fine
  • 1 small white cabbage, chopped fine
  • 1 quart vinegar
  • 1 cup brown sugar
  • 2 tablespoons salt
  • 2 tablespoons mustard seeds

How To Make pepper hash

  • Step 1
    In a cheesecloth combine the peppers, onion and cabbage. Scald in boiling water. Squeeze dry and remove from cheesecloth.
  • Step 2
    Heat vinegar, sugar, salt and mustard seeds. Add vegetables and bring to boiling point.
  • Step 3
    When cool, put into sterilized canning jars and seal.
