- 1 1/2 cups tightly packed flat-leaf parsley leaves
- 1 tablespoon grated lemon rind
- 1 - clove garlic, minced
- 1 tablespoon fresh lemon juice

How To Make parsley-garlic topping

Step 1In food processor, combine the parsley, lemon rind, and garlic. Process until the parsley is minced. Add the lemon juice and process briefly to mix. Serve immediately. Makes 3/4 cup.

Step 2Sprinkle the topping on grilled fish or chicken,or toss with cooked pasta or potatoes. (1/2 cup of parsley contains 40 mgs of vitamin C)
