Ingredients

  • 1 1/2 cups tightly packed flat-leaf parsley leaves
  • 1 tablespoon grated lemon rind
  • 1 - clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • PARSLEY-GARLIC TOPPING

How To Make parsley-garlic topping

  • Step 1
    In food processor, combine the parsley, lemon rind, and garlic. Process until the parsley is minced. Add the lemon juice and process briefly to mix. Serve immediately. Makes 3/4 cup.
  • Step 2
    Sprinkle the topping on grilled fish or chicken,or toss with cooked pasta or potatoes. (1/2 cup of parsley contains 40 mgs of vitamin C)
