A Texan barbecue sauce recipe is traditionally a bold, spicy, homemade recipe, which reflects the diverse cultures that tamed that wild territory.

Here is basic guide for the use of chili in Texas barbecue sauce recipes and their relative "heat factor": Anaheim (mild) Jalapeno (or the smoked version, Chipotle) (medium) Serrano (medium-hot) Cayenne (hot) Habanero (hot) Red Savina Habanero (blazing!)

2 c
chopped onions
1 c
strong black coffee
1 c
1 c
worcestershire sauce
1/2 c
brown sugar
1/2 c
cider vinegar
1/4 c
hot chili peppers, minced*
3 Tbsp
chili powder (adds flavor without heat)
6 clove

2 tsp

1Simmer about 25-30 minutes, then puree in blender to help bring out all of the flavors.
2Note: The dried chilies that come in small plastic packages, can be found in most grocery stores today.

When reconstituted in warm water (10-20 min) they provide a rich smokey flavor that fresh chilies do not have.
