For those who have allergy to tomato or need to avoid tomato due to sensitivity to acid.
It takes a little effort, but freezes well and is my 'Go To' for all things that call for tomato.

Ingredients For nomater sauce
carrots, peeled and diced
beet, peeled and diced
celery ribs, diced
1 1/2 c
water or broth
whole bay leaf
How To Make nomater sauce
In a covered pot, place all ingredients. Brint to a boil, then reduce heat to simmer. Cook until all vetables are fork tender.
Remove bay leaf. Let cool. Blend until smooth. Use it in place of tomato sauce.
*If you need Paste: after blending, return to simmer and reduce.
**If you need Juice: add water or broth to meet your liking.
***This freezes well! And makes aproximately 3 1/2 cups.
