For those who have allergy to tomato or need to avoid tomato due to sensitivity to acid. It takes a little effort, but freezes well and is my 'Go To' for all things that call for tomato.

Ingredients For nomater sauce

6 mdcarrots, peeled and diced
-
1 smbeet, peeled and diced
-
1 lgonion, diced
-
3 stalkcelery ribs, diced

1 1/2 cwater or broth

1whole bay leaf
How To Make nomater sauce

1In a covered pot, place all ingredients. Brint to a boil, then reduce heat to simmer. Cook until all vetables are fork tender.

2Remove bay leaf. Let cool. Blend until smooth. Use it in place of tomato sauce.

3*If you need Paste: after blending, return to simmer and reduce. **If you need Juice: add water or broth to meet your liking. ***This freezes well! And makes aproximately 3 1/2 cups.
