For those who have allergy to tomato or need to avoid tomato due to sensitivity to acid. It takes a little effort, but freezes well and is my 'Go To' for all things that call for tomato.

Ingredients
- 6 medium carrots, peeled and diced
- 1 small beet, peeled and diced
- 1 large onion, diced
- 3 stalks celery ribs, diced
- 1 1/2 cups water or broth
- 1 - whole bay leaf
How To Make nomater sauce

Step 1In a covered pot, place all ingredients. Brint to a boil, then reduce heat to simmer. Cook until all vetables are fork tender.

Step 2Remove bay leaf. Let cool. Blend until smooth. Use it in place of tomato sauce.

Step 3*If you need Paste: after blending, return to simmer and reduce. **If you need Juice: add water or broth to meet your liking. ***This freezes well! And makes aproximately 3 1/2 cups.
