If you love Mexican food… things like chimichungas, and burritos, then you will love this sauce. It has a piquant, cheesy flavor, and you can adjust the heat to your own personal tastes. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 1 tablespoon grapeseed oil
  • 1 tablespoon sweet butter, unsalted
  • 1 1/2 tablespoons flour, all-purpose variety
  • 1 cup chicken stock, not broth
  • 1/4 teaspoon white pepper, freshly ground, or to taste
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon salt, kosher variety, or to taste
  • 1/4 cup sour cream
  • 1 tablespoon lime juice, freshly squeezed
  • 2 ounces diced green chilies, mild or hot, your choice, drained, 1/2 can
  • 1/4 cup colby jack cheese, freshly grated

How To Make mexican essentials: green chili sauce

    My favorite canned chilies are the Hatch brand, and they come in 4 ounce cans.
  • Step 3
    Gather your Ingredients (mise en place).
  • Step 4
    Add the grapeseed oil, and butter to a average-sized saucepan, over medium heat.
  • Step 5
    When the foaming subsides, add the flour, and whisk to combine with the oil and butter.
  • Step 6
    Whisk for about two minutes, until it resembles a thick paste.
  • Step 7
    Add a quarter of the stock, and whisk until incorporated, then add the remainder of the stock, and whisk until combined.
  • Step 8
    Reduce the heat to medium-low, add the cumin, salt, and pepper, and simmer until it begins to thicken, about 2 – 3 minutes.

    Add the sour cream lime juice, and green chilies, then mix to combine.
  • Step 10
    Finally, add the cheese, and melt into the sauce.

    Chef’s Note: Do a final tasting for proper seasoning.
