Mexican Essentials: Green Chili Sauce

If you love Mexican food… things like chimichungas, and burritos, then you will love this sauce. It has a piquant, cheesy flavor, and you can adjust the heat to your own personal tastes.

So, you ready… Let’s get into the kitchen.

  • 1 Tbsp
    grapeseed oil
  • 1 Tbsp
    sweet butter, unsalted
  • 1 1/2 Tbsp
    flour, all-purpose variety
  • 1 c
    chicken stock, not broth
  • 1/4 tsp
    white pepper, freshly ground, or to taste
  • 1/4 tsp
    ground cumin
  • 1/8 tsp
    salt, kosher variety, or to taste
  • 1/4 c
    sour cream
  • 1 Tbsp
    lime juice, freshly squeezed
  • 2 oz
    diced green chilies, mild or hot, your choice, drained, 1/2 can
  • 1/4 c
    colby jack cheese, freshly grated

How to Make Mexican Essentials: Green Chili Sauce


  2. My favorite canned chilies are the Hatch brand, and they come in 4 ounce cans.
  3. Gather your Ingredients (mise en place).
  4. Add the grapeseed oil, and butter to a average-sized saucepan, over medium heat.
  5. When the foaming subsides, add the flour, and whisk to combine with the oil and butter.
  6. Whisk for about two minutes, until it resembles a thick paste.
  7. Add a quarter of the stock, and whisk until incorporated, then add the remainder of the stock, and whisk until combined.
  8. Reduce the heat to medium-low, add the cumin, salt, and pepper, and simmer until it begins to thicken, about 2 – 3 minutes.
  9. Add the sour cream lime juice, and green chilies, then mix to combine.
  10. Finally, add the cheese, and melt into the sauce.
  11. Chef’s Note: Do a final tasting for proper seasoning.
  13. Use as a sauce on things like tacos, burritos, and chimichangas. Enjoy.
  14. Keep the faith, and keep cooking.
