Here is 2 different mixes for Garam Masala. both are excellent mixes and work well with Indian cooking. These are spice mixes with spices that will warm you from the inside out full of flavor but not heat.

Ingredients

  • MIX 1
  • 2 cups cumin seeds
  • 1 cup coriander seeds
  • 1/2 cup black cardamom pods
  • 1/2 cup black pepercorns
  • 1/2 cup green cardamom pods
  • 1/2 cup ground ginger
  • MIX 2
  • 1 cup cumin seeds
  • 2/3 cup black cardamom seeds
  • 2/3 cup black peppercorns, whole
  • 1/2 cup green cardamom pods
  • 1/3 cup coriander seeds
  • 1/3 cup fennel seed
  • 1/4 cup cloves
  • 20 sticks cinnamon
  • 1/4 cup mace
  • 1/4 cup black cumin seeds
  • 2 2/3 cups bay leaves
  • 1 cup dried rose petals
  • 3 tablespoons ground ginger
  • 3 - nutmeg nuts, grated

How To Make garam masala

  • Step 1
    [Mix 1] Put all the ingredients in a mortar and pound with a pestle, or grind in a spice grinder, to make a fine powder. sieve(strain) and store in a sterilized dry and airtight container.
  • Step 2
    [Mix 2] Put all the ingredients, except the ground ginger and nutmeg, in a mortar and pound with a pestle, or grind in a spice grinder, to make a fine powder. transfer to clean,dry bowl, add the ground ginger and nutmeg and mix well. Sieve(strain) and store in a sterilized dry and airtight container.
