Ingredients
- 3 tablespoons olive oil
- 1 tablespoon all purpose flour
- 1/4 cup chili powder
- 16 ounces chicken stock
- 10 ounces tomato puree
- 1 teaspoon oregano, dried
- 1 teaspoon ground cumin
How To Make enchilada sauce

Step 1In a heavy saucepan, heat the oil.

Step 2Make a roux by adding flour and cook, whisking for 1 minute.

Step 3Whisk in the chili powder and cook briefly (30 seconds or so).

Step 4Whisk in the chicken stock, tomato puree, oregano and cumin and bring to a boil.

Step 5Reduce the heat and simmer 15 minutes, lid askew, until flavors have a chance to meld, stirring occasionally.

Step 6Season to taste with salt and garlic powder, if desired.
