Stove Top


  • 3 Tbsp
    olive oil
  • 1 Tbsp
    all purpose flour
  • 1/4 c
    chili powder
  • 16 oz
    chicken stock
  • 10 oz
    tomato puree
  • 1 tsp
    oregano, dried
  • 1 tsp
    ground cumin

How to Make Enchilada Sauce


  1. In a heavy saucepan, heat the oil.
  2. Make a roux by adding flour and cook, whisking for 1 minute.
  3. Whisk in the chili powder and cook briefly (30 seconds or so).
  4. Whisk in the chicken stock, tomato puree, oregano and cumin and bring to a boil.
  5. Reduce the heat and simmer 15 minutes, lid askew, until flavors have a chance to meld, stirring occasionally.
  6. Season to taste with salt and garlic powder, if desired.
