Ingredients

  • 3 tablespoons olive oil
  • 1 tablespoon all purpose flour
  • 1/4 cup chili powder
  • 16 ounces chicken stock
  • 10 ounces tomato puree
  • 1 teaspoon oregano, dried
  • 1 teaspoon ground cumin

How To Make enchilada sauce

  • Step 1
    In a heavy saucepan, heat the oil.
  • Step 2
    Make a roux by adding flour and cook, whisking for 1 minute.
  • Step 3
    Whisk in the chili powder and cook briefly (30 seconds or so).
  • Step 4
    Whisk in the chicken stock, tomato puree, oregano and cumin and bring to a boil.
  • Step 5
    Reduce the heat and simmer 15 minutes, lid askew, until flavors have a chance to meld, stirring occasionally.
  • Step 6
    Season to taste with salt and garlic powder, if desired.
