cucumber carrot relish
This is an Old recipe handed down from my Wife's Great Grandmother dateing back to the 1800's. I have not found it on any site any where . I hope you enjoy this as much as we do. It makes delicious tarter sauce. For tarter sauce strain and squeeze 2-3 tablespoons full and add to 1 cup of mayonnaise chill and serve. Or mix to your liking.

Ingredients
- 10 cups cucumbers
- 4 cups carrots
- 3 cups onions
- 6 tablespoons salt
- 7 cups sugar
- 5 cups apple cider vinegar
- 5 teaspoons mustard seed
- 5 teaspoons celery seed
How To Make cucumber carrot relish

Step 1Grind cucumbers, carrots and onions. Place in large bowl, add salt and mix. Let set for three hours. Place in strainer drain for two hours.

Step 2Dump into a large pot, add remaining ingredients and bring to a boil over high heat stirring to dissolve sugar. Lower heat and Simmer 20 minutes. While simmering heat lids in water (do not boil). Place into sterile pint jars and seal.

Step 3Set on towel on counter and cover with another towel, cool over night. In the morning check to see if all sealed if not place in hot water bath and boil for 15 minutes too re-seal
