Ingredients
- 1 pound cremini mushrooms, quartered
- 3/4 teaspoon salt
- 2 tablespoons butter, unsalted
- 1 cup heavy cream
- 2 tablespoons soy sauce, low sodium
- 1 tablespoon fresh tarragon leaves
- ground black pepper, to taste
How To Make creamy mushroom sauce

Step 1In a dry skillet over medium heat, add the mushrooms and cook, stirring occasionally, until just beginning to brown, about 5 minutes.

Step 2Sprinkle with salt and cook, stirring until beginning to “sweat”, about 2 more minutes.

Step 3Stir in the butter. Once the butter begins to bubble, add the cream, soy sauce, and tarragon.

Step 4Reduce the heat to a low simmer and cook, stirring often, until the sauce is thickened slightly, 6 to 7 minutes. Season with salt and pepper, to taste.
