Ingredients

  • 1 pound cremini mushrooms, quartered
  • 3/4 teaspoon salt
  • 2 tablespoons butter, unsalted
  • 1 cup heavy cream
  • 2 tablespoons soy sauce, low sodium
  • 1 tablespoon fresh tarragon leaves
  • ground black pepper, to taste

How To Make creamy mushroom sauce

  • Step 1
    In a dry skillet over medium heat, add the mushrooms and cook, stirring occasionally, until just beginning to brown, about 5 minutes.
  • Step 2
    Sprinkle with salt and cook, stirring until beginning to “sweat”, about 2 more minutes.
  • Step 3
    Stir in the butter. Once the butter begins to bubble, add the cream, soy sauce, and tarragon.
  • Step 4
    Reduce the heat to a low simmer and cook, stirring often, until the sauce is thickened slightly, 6 to 7 minutes. Season with salt and pepper, to taste.
