Slow cook on a barbecue sauce that is sweet, but not too sweet because of the bourbon. The veggies kind of dissolve with the cooking. Makes 9 cups.

    onion, chopped
  • 1 medium
    green bell pepper, chopped
  • 1 stalk(s)
    celery with leaves, chopped
  • 3 clove
    garlic, chopped
  • 1 Tbsp
    fresh sage, chopped
  • 1 c
    butter, melted
  • 3 c
    tomato juice
  • 2 1/4 c
  • 1 1/2 c
  • 3/4 c
    brown sugar, firmly packed
  • 6 oz
    tomato paste (1 can)
  • 1/2 tsp
  • 1 c
  • ·
    rind of 3 lemons
  • ·
    juice of 3 lemons

How to Make Country Style Barbecue Sauce


  1. Saute the onion, green pepper, celery, garlic, and sage in the butter in a Dutch oven until the vegetables are tender.
  2. Add tomato juice and the next 5 ingredients; stir well. Bring to a boil; reduce heat, and simmer, uncovered, for 2 hours.
  3. Stir in the bourbon, lemon rind, and juice. Cover and simmer for 30 minutes.
  4. Use as a basting sauce for chicken or pork during cooking.
