Slow cook on a barbecue sauce that is sweet, but not too sweet because of the bourbon. The veggies kind of dissolve with the cooking. Makes 9 cups.

green bell pepper, chopped

celery with leaves, chopped

garlic, chopped
1 Tbsp
fresh sage, chopped
1 c
butter, melted
3 c
tomato juice
2 1/4 c
1 1/2 c
3/4 c
brown sugar, firmly packed
6 oz
tomato paste (1 can)
1/2 tsp
1 c
rind of 3 lemons
juice of 3 lemons

How to Make Country Style Barbecue Sauce


  • 1Saute the onion, green pepper, celery, garlic, and sage in the butter in a Dutch oven until the vegetables are tender.
  • 2Add tomato juice and the next 5 ingredients; stir well. Bring to a boil; reduce heat, and simmer, uncovered, for 2 hours.
  • 3Stir in the bourbon, lemon rind, and juice. Cover and simmer for 30 minutes.
  • 4Use as a basting sauce for chicken or pork during cooking.
