country style barbecue sauce

Slow cook on a barbecue sauce that is sweet, but not too sweet because of the bourbon. The veggies kind of dissolve with the cooking. Makes 9 cups.

Ingredients

  • 1 - onion, chopped
  • 1 medium green bell pepper, chopped
  • 1 stalk celery with leaves, chopped
  • 3 cloves garlic, chopped
  • 1 tablespoon fresh sage, chopped
  • 1 cup butter, melted
  • 3 cups tomato juice
  • 2 1/4 cups ketchup
  • 1 1/2 cups vinegar
  • 3/4 cup brown sugar, firmly packed
  • 6 ounces tomato paste (1 can)
  • 1/2 teaspoon salt
  • 1 cup bourbon
  • - rind of 3 lemons
  • - juice of 3 lemons

How To Make country style barbecue sauce

  • Step 1
    Saute the onion, green pepper, celery, garlic, and sage in the butter in a Dutch oven until the vegetables are tender.
  • Step 2
    Add tomato juice and the next 5 ingredients; stir well. Bring to a boil; reduce heat, and simmer, uncovered, for 2 hours.
  • Step 3
    Stir in the bourbon, lemon rind, and juice. Cover and simmer for 30 minutes.
  • Step 4
    Use as a basting sauce for chicken or pork during cooking.
