country style barbecue sauce
Slow cook on a barbecue sauce that is sweet, but not too sweet because of the bourbon. The veggies kind of dissolve with the cooking. Makes 9 cups.

Ingredients
- 1 - onion, chopped
- 1 medium green bell pepper, chopped
- 1 stalk celery with leaves, chopped
- 3 cloves garlic, chopped
- 1 tablespoon fresh sage, chopped
- 1 cup butter, melted
- 3 cups tomato juice
- 2 1/4 cups ketchup
- 1 1/2 cups vinegar
- 3/4 cup brown sugar, firmly packed
- 6 ounces tomato paste (1 can)
- 1/2 teaspoon salt
- 1 cup bourbon
- - rind of 3 lemons
- - juice of 3 lemons
How To Make country style barbecue sauce

Step 1Saute the onion, green pepper, celery, garlic, and sage in the butter in a Dutch oven until the vegetables are tender.

Step 2Add tomato juice and the next 5 ingredients; stir well. Bring to a boil; reduce heat, and simmer, uncovered, for 2 hours.

Step 3Stir in the bourbon, lemon rind, and juice. Cover and simmer for 30 minutes.

Step 4Use as a basting sauce for chicken or pork during cooking.
