Ingredients
- 2 cups chopped onion
- 1 cup chopped green pepper
- 1/2 cup coarsely chopped carrots
- 1/2 cup sliced celery
- 4 cloves garlic, minced
- 1/4 cup olive oil
- 6 large ripe tomatoes, peeled and chopped or 2 16 oz. cans tomatoes
- 1 - 6 oz. can tomatoes paste
- 1 1/2 teaspoons dried basil
- 1 teaspoon sugar
- 1 teaspoon salt
- 1 teaspoon each dried oregano and dried thyme
- 1/4 teaspoon pepper
- 1/2 cup water

Step 1Cook first 5 ingredients in oil till vegetables are tender. Add tomatoes with their liquid and remaining ingredients. Cover and simmer 30 mins uncover and simmer for 15mins.
