Ingredients
- 1 cup fresh or frozen cherries, pitted and halved
- 1 cup water
- 1/2 cup granulated sugar, or as needed (see footnote)
How To Make cherry simple syrup

Step 1Combine all the ingredients in a medium pot over medium-high heat.

Step 2As soon as it starts simmering, reduce the heat to medium-low and let the mixture simmer gently for 20 minutes, breaking up the cherries with the tip of a wooden spoon, a potato masher or even a meat chopper.

Step 3When cooking time is up, remove from the heat and let it rest for 10 minutes

Step 4Transfer the mixture to a fine sieve sitting over a bowl and with the back of a spoon, press down on the fruit to extract as much juice as possible.

Step 5Store the syrup in an airtight container and transfer to the fridge until ready to use.

Step 6Footnote: Simple syrup usually has the same amount of sugar and water. In this case, because I use Bing Cherries and they’re so sweet, I reduce the amount of sugar used.
