This is an excellent syrup to drizzle over a nice stack of pancakes, some homemade waffles; even French toast. Anything you wish to have covered in sweet goodness. As a matter of fact, take a spoonful and put it into your coffee. It’s easy to make, and the cinnamon sticks give it just the right amount of yummy cinnamon flavor. If you really want to please your breakfast houseguests, just whip up a batch of this syrup, and see the smiles spread across their faces. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 4 cups good fresh apple cider, organic, if possible
  • 2 tablespoons unsalted butter
  • 1 1/2 cups coconut sugar
  • 2 large cinnamon sticks
  • 1 teaspoon vanilla extract

How To Make breakfast essentials: apple cider syrup

    PREP/PREPARE
  • Step 2
    Gather your ingredients (mise en place).
  • Step 3
    Add the cider to a saucepan over medium to medium-low heat.
  • Step 4
    Chef’s Note: Remember to use apple cider… not apple juice.
  • Step 5
    When the the liquid begins to simmer, add the coconut sugar, and the cinnamon sticks.

    Simmer, stirring occasionally, until the mixture reduces by about half, and it thickens to a syrupy consistency, about 30 – 40 minutes.

    Chef’s Note: Don’t raise the heat too high... You don’t want the syrup to burn. Just leave that slow evaporation to do its thing.

    Add the vanilla extract, and continue to stir for an additional minute.
  • Step 9
    Remove from the heat, add the butter, and whisk to combine.
  • Step 10
    Store in a jar with a tight-fitting lid.
  • Step 11
    Chef’s Tip: If your jar can handle it, leave the cinnamon sticks in the syrup. They will continue to infuse the syrup with flavor as it ages. Plus they create a nice visual appearance.

    Chef’s Note: The syrup should last up to two weeks in the fridge.
