betty's sweet creamy curry sauce

A simple sauce perfect for pouring over fish, chicken, pork, turkey or snitzels. An easy way to jazz up a simple meal.

yield Makes 1 1/2 cups - enough for 6 people

Ingredients

  • - 1 tb oil
  • - 1 small onion, diced fine
  • - 1 tsp minced garlic
  • - 1/2 - 1 tablespoon mild curry powder - what ever you have handy
  • - 1 heaped tb tomato paste
  • - 2 tb fruit chutney (what ever you have handy)
  • - 1 1/2 cups cream

How To Make betty's sweet creamy curry sauce

  • Step 1
    In a small-ish frying pan. Heat the oil and add the onion, fry until translucent over a medium heat. Add the garlic and cook until fragrant. Add the curry powder and stir quickly
  • Step 2
    Add the tomato paste, chutney and cream. Stir to prevent burning. Reduce heat to low and simmer for 5 minutes. Serve.
