beef essentials: cheeky bbq sauce
Made this and another sauce over the weekend. This is a BBQ sauce with ingredients that compliment beef. I have yet to try it on chicken, or pork; however, I think with its strong flavors, beef would be your best choice. Simple ingredients… easy/peasy to make… and tastes awesome. So, you ready… Let’s get into the kitchen.

- BASE INGREDIENTS
- 1 1/2 tablespoons cornstarch, or flour, all-purpose variety
- 1 cup apple cider
- 2 tablespoons apple cider vinegar
- 1 tablespoon worcestershire sauce
- ADDITIONAL INGREDIENTS
- 1/2 cup ketchup
- 1/2 cup coconut sugar
- 1 tablespoon dehydrated onions, ground to a powder
- 1 teaspoon ancho chili powder
- 1/2 teaspoon salt, kosher variety, fine grind, or to taste
- 1/2 teaspoon white pepper, freshly ground, or to taste
- 1/2 teaspoon smoked paprika
- OPTONAL ITEMS
- 1 - 2 pinches cayenne pepper, for kick

Step 2You will need a saucepan that will hold all of the ingredients to make this recipe.

Step 3Because homemade spices and condiments do not contain any preservatives, it is important to store them properly. Non-reactive (glass) containers with tight-fitting lids are a must. If I am making a dry spice, I love to use old spice bottles that I have run through the dishwasher. If I am doing homemade sauces, I love using Weck jars. They are all glass, come in all sizes and shapes, and have excellent leakproof lids. If you shop online, you can go to Amazon, and type in “Weck Jars” and you will find a ton of them. Dry spices should be kept in a cool space, away from sunlight (spice cabinet), and sauces, in most cases, should be stored in the fridge. This particular recipe should keep for 2 – 3 weeks when stored in the fridge.

Step 5Gather your ingredients (mise en place).

Step 6Add the base ingredients to a cold saucepan and whisk until the flour is combined with the liquid ingredients.

Step 7Set the saucepan over medium heat, whisk in the remaining ingredients, and allow to come up to a simmer.

Step 8Allow the sauce to simmer (stirring occasionally), until it thickens, about 5 – 7 minutes.

Step 9Do a final tasting to check for proper seasoning.

Step 10Allow to completely cool, then store in a non-reactive container in the fridge until needed.

Step 12Serve with just about any beef. Enjoy.
