With the cultural mix and great variety of flavors in the Colombian culinary background, a Puerto Rican husband that loves his early life home meals and a great deal of experience in the Caribean lifestyle; I have come to learn that sofrito is a cooking base that must be present in every kitchen. There are other ingredients like the "ajicito dulce" that we hardly find here, but this will do it! Stews, meats, soups, rices, beans, anything will taste much better with sofrito, plus it's a faboulous time saver! This is a very easy and fast way to do it... you'll love it!

Ingredients For sofrito

  • 3 md
    green cubanelle peppers
  • 2 md
    red or orange bell peppers
  • 2 bunch
    culantro
  • 1 bunch
    (thick bunch) cilantro
  • 2
    heads of garlic
  • 3 md
    onions (i use vidalia) but anyone will do it
  • 1/2 c
    olive oil
  • salt to your taste (i use sea salt)

How To Make sofrito

  • 1
    Cut in big bites size and put them all in a blender, starting and finishing with the oil. Blend until all ingredients are well mixed. Distribute evenly in plastic containers of about one cup and half each and leave one for use; froze the rest. You'll have sofrito for a while! It'll make 5 or 6 cups.
