This lovely jam is sweet with a light tomato flavor. It's really wonderful, opened it will last for 1 month in the fridge, unopened it will last a year.

Ingredients
- 2 pounds fresh ripe tomatoes, seeded,
- 2 cups white sugar
- 3/4 cup water
- 1/2 - lemon, juiced
How To Make tomato jam

Step 1Pick nice ripe tomatoes, remove the skin and seeds. Coarsely cut up.

Step 2In a large pot add tomato and the sugar and cook over medium heat until the sugar has dissolved.

Step 3Raise the heat until the mixture starts to boil; allow to boil for 15 minutes, or until it thickens.

Step 4Stir occasionally and remove any accumulated scum from the surface.

Step 5Now, stir in the lemon juice and cook for 10 minutes ( or until thick)

Step 6Cool slightly, then pour into sterilized jars, leaving a 1/4 inch space at the top.
