How to Make SPICED CHERRIES RUSSIAN STYLE
- Pit the cherries. Cook any bruised or imperfect fruit 30 minutes with the water, mash with a spoon, strain through a sieve, and keep. This is your cherry syrup.
- Mix the cherry syrup, vinegar, sugar, and spices. Cook 30 minutes and let cool. Put the cherries in a large bowl and pour the cooled vinegar over them. Let stand 3 days, stirring from time to time.
- On the third day pour off the vinegar, boil it up, and let it cool. Put the cherries in sterilized jars. Fill the jars with the vinegar. Seal and keep in a cool, dry place. Allow to mature for 2 months before using.
