In the summer it seems I always have over ripe fruit on my kitchen table. What a waste of money ( this could be); and I didnt want to spend more money for store jars of jam. This is my solution...

Ingredients

  • 4 - peaches or 2 cups pitted cherries
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 1/2 box sure jell for fruit
  • 1/2 small jalapeno pepper(s) only for the peach jam

How To Make one jar icebox jam

    Step 1
    In a 2.5 quart pot add your fruit with sugar, and 1/4 cup water. Bring to a boil, stir, so mixture will not stick. BOIL about 20 minutes.

    Step 2
    After 20 minutes add vanilla and Sure Jell ( form package), boil 5 to 7 minutes or until fruit thickens.

    Step 3
    Skim off any foam that may float on top of fruit, Let fruit cool, then Transfer fruit to glass jar, and refrigerate for up to 4 weeks. ENJOY !
