one jar icebox jam
In the summer it seems I always have over ripe fruit on my kitchen table. What a waste of money ( this could be); and I didnt want to spend more money for store jars of jam. This is my solution...

Ingredients
- 4 - peaches or 2 cups pitted cherries
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1/2 box sure jell for fruit
- 1/2 small jalapeno pepper(s) only for the peach jam
How To Make one jar icebox jam

Step 1In a 2.5 quart pot add your fruit with sugar, and 1/4 cup water. Bring to a boil, stir, so mixture will not stick. BOIL about 20 minutes.

Step 2After 20 minutes add vanilla and Sure Jell ( form package), boil 5 to 7 minutes or until fruit thickens.

Step 3Skim off any foam that may float on top of fruit, Let fruit cool, then Transfer fruit to glass jar, and refrigerate for up to 4 weeks. ENJOY !
