first place blackberry freezer jam!
This unique and delicious recipe is one that I found in an old recipe box from an auction! I love to honor the people who lovingly saved their favorite recipes during their lifetime and they sadly get discarded and end up in a public auction. I tweaked it to my personal style and the rest is 1st place history!

Ingredients
- 31/4 mashed blackberries
- 1/4 cup freshly squeezed lemon juice
- 1 1.75 ounce box sure gel pectin ( the yellow box)
- 1 cup light corn syrup
- 4 cups white sugar
- 1 teaspoon freshly grated nutmeg
How To Make first place blackberry freezer jam!

Step 1In a large saucepan off the stove, mix blackberries and lemon juice. Sift in the pectin while stirring.

Step 2Medium simmer for 30 minutes and stir every few minutes.

Step 3Remove from heat and stir in corn syrup. Place pan back on heat and gradually stir in sugar. Cook on medium heat 2 -5 minutes, making sure sugar is fully dissolved. Don"t cook any longer or it will be runny.

Step 4Place jam into clean jars or other containers and place in fridge or freezer. ( I noticed the jam improved in flavor after the flavors had time to mature for a day or two)

Step 5Jam is good three weeks in fridge and six months in freezer.
