spicy watermelon rind spread
One of summer's gift to the world is watermelon. We all know it as a thirst quencher loaded with antioxidants, but most of us dispose the rind (the white part between the the green outer husk and the red inner fruit) without knowing it has nutritional value too. We can use it in our cooking as salads, chutney/ dip/ spread and in moru kuzambu/ spiced buttermilk. Slice only the white part from the green rind.

Ingredients
- 2 cups chopped watermelon rind
- 1 teaspoon chili flakes
- 1 tablespoon garbanzos, cooked
- 1 medium tomato
- 1 teaspoon lemon juice
- 1 clove garlic (optional)
- 1/4 teaspoon salt
- 1 tablespoon oil
How To Make spicy watermelon rind spread

Step 1Slice only the white part (the white part between the the green outer husk and the red inner fruit) from the green rind.

Step 2Dry the (can) garbanzo beans in a towel. Heat oil in a pan and add garbanzo beans, chili flakes and garlic, stir fry it for 2 minutes.

Step 3Now add the chopped watermelon rind and fry for few mins.

Step 4Add the cilantro leaves and stir it till it becomes wilted (this step is optional)

Step 5Add the chopped tomato and cook, till the tomatoes are well blended.

Step 6Pour the lemon juice and cook till it becomes dry. Add salt

Step 7Grind the mixture in a blender.

Step 8Transfer it to a bowl, We can add cream cheese with it and use it as a sandwich or tortilla spread or as a dip.
