peach & pepper bbq sauce
Found this in a Southern Living magazine a few yrs. ago.Great for giving away for gifts.I like it best on pork chops.

Ingredients
- 2 cups red sweet peppers,chopped
- 1 cup onions,chopped
- 1 teaspoon crushed red pepper flakes
- 2 cloves garlic,minced
- 1 tablespoon olive oil
- 4 pounds fresh peaches or 3-(16 oz.) pkg frozen unsweetened peach slices
- 1/4 cup rice vinegar
- 1 tablespoon lemon juice, fresh or bottled
- 1 tablespoon soy sauce
- 2 teaspoons grated fresh ginger
- 1/4 teaspoon salt
- 1 1/2 cups packed light br. sugar
- 1-5 1/2oz. cans peach or apricot nectar
How To Make peach & pepper bbq sauce

Step 1In a lrg. skillet,cook sweet peppers,onion,red pepper flakes and garlic until just tender.Remove from heat.

Step 2Use food processor or blender to finely chop peaches.Transfer peaches to a 6qt.dutch oven or kettle(should have about 7C peaches).

Step 3Process the pepper mixture the same as peaches.Add to peach mixture in kettle.

Step 4Add br. sugar,nector,vinegar,lenom juice,soy sauce,ginger & salt to peach and pepper mixture.

Step 5Bring to a boil,reduce heat and simmer,uncovered 20 min.Stir occasionally.Remove from heat.At this point,freeze or can.Makes 7 half pints.
