fruit essentials: raspberry jalapeno fruit spread

This is an easy/peasy recipe to make and will live in the fridge for up to a year. Although I doubt it will last that long. Easy to make with a minimum of ingredients, and tastes awesome… Oh, and by the way, it only takes about 30 minutes to makes. Use this as a base, vary the fruits… Have fun with it. As a matter of fact, if you do not want the heat, leave the peppers out. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 2 1/2 cups white sugar, granulated variety
  • 2 cups frozen or fresh raspberries, frozen is just fine
  • 1 - 2 medium peppers, like jalapeno, habanero, or any one of your favorites, seeded and finely chopped
  • 1 tablespoon lime juice, freshly squeezed
  • 1 tablespoon fruit pectin, powdered variety

  • Step 1
    PREP/PREPARE
  • Step 2
    You will need a medium size saucepan to make this recipe.
  • Step 3
    Gather your ingredients (mise en place).
  • Step 4
    Crush the berries, add them to a saucepan over medium-high heat, and then add all the ingredients; except the pectin.
  • Step 5
    Bring to a rolling boil, while constantly stirring, about 4 – 5 minutes.
  • Step 6
    Because you are making a fruit spread, the best tool to use here is a wooden spoon.
  • Step 7
    Stir in the pectin, and boil for an additional minute.
  • Step 8
    Remove from the heat and skim off any foam that sits on top.
  • Step 9
    Add to jars and allow to completely cool before placing into the refrigerator.

  • So yummy

    Use it in any way you would use a good fruit spread. I like it on toast with a bit of butter. Enjoy.
