susan's summer squash salad
I first tried this salad when I bought it in my supermarket's deli. I liked it so much that I played around with it until I managed to duplicate it. You can use regular dressing or the low-fat or fat-free versions if you like. I like it best with the Sweet Onion (sometimes called Sweet Vidalia Onion) dressing. Just look for it in the salad dressing aisle.

Ingredients
- 1 cup diced zucchini
- 1 cup diced yellow squash
- 1 cup diced red bell pepper
- 1/2 cup diced red onion
- 1/4 cup sliced green onion with tops
- 1/4-1/2 cup sweet onion salad dressing
- 1/2 teaspoon dried thyme (or 1 tsp fresh)
- 1/2 teaspoon dried rosemary (or 1 tsp fresh)
How To Make susan's summer squash salad

Step 1Chop vegetables into pieces about 1/2 - 3/4 inch. Marinate in the dressing with the herbs. Allow to marinate at least 30 minutes before serving. Even better if marinated longer, about 4-8 hours or overnight.

Step 2Vary the dressing for different flavors. Italian or Greek are also good. Even fat-free varieties can be used.

Step 3Vary the sweetness with Stevia, honey, or agave nectar.
