I love pesto so much,I grow basil just to make it.I make a lot of pesto and freeze it in ice cube trays. One cube is enough per person.I love to make pizza with pesto instead of tomato pizza sauce. Mixed with pasta and shrimp is another favorite way I like pesto. Mixed with mayo makes a great dressing for pasta salad as well.

Ingredients For pesto

  • 1/2 cup pignolis (pine nuts)
  • 3 t. chopped fresh garlic
  • 5 c fresh basil leaves,packed
  • 1 t. salt
  • 1 t. freshly ground black pepper
  • 1 1/2 c olive oil
  • 1 c freshly grated parmesan cheese

How To Make pesto

  • 1
    Put the pignolis, and garlic in the bowl of a food processor fitted with a steel blade. Process for 30 seconds. Add the basil leaves, salt, and pepper. With the processor running, slowly pour the olive oil into the bowl through the feed tube and process until the pesto is thoroughly pureed. Add the Parmesan and puree for a minute. Serve, or store the pesto in the refrigerator or freezer with a thin film of olive oil on top.
