mike's easy creamy balsamic dressing
My husband is on the maintenance phase after reaching his goal weight (yay, hubby!) trying to figure out what he could use as a dressing for his salad. He came up with this very low carb version, using simple ingredients. He had bought a bottle of original Caesar dressing, but likes this one much better! Make sure you use a very good quality balsamic vinegar, like the kind you would find at a wholesale, Costco type store. Use it on any kind of salad, coat meat with it before dredging in flour to bake, let your imagination run wild! NOTE: Freeze a lemon whole and grate it as needed.

Ingredients
- 1 1/2 cups hellmans mayonnaise (best foods)
- 6 tablespoons good quality balsalmic vinegar
- 1 1/2 tablespoons grated lemon (see notes)
- - salt and pepper
