This is a great recipe I created many years ago to use up all of that extra zucchini and tomatoes from my garden. It's quick, easy and tasty!!

Ingredients For marinated zucchini salad

  • 2
    small zucchini, sliced
  • 1
    medium sweet onion, halved and sliced
  • 1
    large tomato, peeled and roughly chopped
  • 1/4 c
    fresh basil, chopped
  • 8 oz
    bottled italian dressing
  • salt and pepper
  • 1 Tbsp
    freshly grated parmesan cheese

How To Make marinated zucchini salad

  • 1
    Mix all ingredients (except Parmesan) in a large bowl.

    Transfer to storage container, cover and refrigerate for at least 3 hours.

    Before serving, sprinkle Parmesan over top.
