I love the sweet-tart flavor of this dressing over a bowl of mixed greens and veggies. It's such a "summertime" taste! This recipe makes enough vinaigrette for 4 medium-sized salads or 2 large ones. Be sure to use soft, ripe kiwi or it can be a bit tart.

Ingredients
- 2 - kiwi fruit, peeled & coarsely chopped
- 3 tablespoons canola oil
- 2 tablespoons red wine vinegar or apple cider vinegar
- 1 tablespoon honey
- 1/4 teaspoon salt
- 1/4 teaspoon white pepper
How To Make kiwi vinaigrette

Step 1Combine all ingredients in a blender and process for 5-10 seconds or until smooth. Pour into a serving container and refrigerate. Serve over greens.
