This is my Grandma Roberta Campbell's recipe for home made mayonnaise and it is delicious. It is lighter in texture than regular mayonnaise and way more flavorful. It is also a really easy recipe to make. Where she calls for paprika you could add sweet or hot paprika to change your flavor up a bit. It is just a wonderful recipe and I am so glad I found her hand written recipe inside one of her cookbooks. I hope you enjoy.

Ingredients

  • 1 large whole egg
  • 2 tablespoons lemon juice or vinegar (i used seasoned rice vinegar)
  • 1/2 teaspoon salt
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon pepper
  • 1 cup salad oil
  • 1/3 teaspoon paprika
  • 1/2 teaspoon honey

  • Step 1
    Ingredients for mayonnaise
  • Step 2
    The instructions start out with: (Room temperature) - Blend all (except last 2 ingredients) with 1/2 cup of the oil to start, add other 1/2 cup and continue to blend.
  • Step 3
    Now, blend a few more seconds; add 1/3 tsp. paprika and 1/2 tsp honey.
  • Step 4
    Now your delicious and light in texture homemade mayo is ready.
