Grilled Vegetable Marinade/Dressing
3 Tbspolive oil
1 1/2 Tbspbalsamic vinegar
1/4 tspdijon mustard
1/2 tspfresh rosemary, removed from stems and chopped
1/2 tspfresh thyme, removed from stems
·salt and pepper, to taste
How to Make Grilled Vegetable Marinade/Dressing
- Wash and prepare vegetable of choice, place in casserole dish.
- Combine the oil, vinegar, honey, dijon, rosemary and thyme in a small bowl and whisk until combined. Pour over vegetables and then add salt and pepper.
- Transfer vegetables to grill and cook over medium heat until tender, usually about ten minutes. Place cooked vegetables back in casserole dish and serve warm.
