I first started using this marinade/dressing on grilled tomatoes, but my favorite thing to use it on is asparagus. I usually dress the vegetables in a casserole dish and put them right back into it when I take them off the grill to save on clean-up. This is great on tomatoes, asparagus, green beans, squash and eggplant.

Ingredients

3 Tbsp
olive oil
1 1/2 Tbsp
balsamic vinegar
2 tsp
honey
1/4 tsp
dijon mustard
1/2 tsp
fresh rosemary, removed from stems and chopped
1/2 tsp
fresh thyme, removed from stems
salt and pepper, to taste

How to Make Grilled Vegetable Marinade/Dressing

Step-by-Step

  • 1Wash and prepare vegetable of choice, place in casserole dish.
  • 2Combine the oil, vinegar, honey, dijon, rosemary and thyme in a small bowl and whisk until combined. Pour over vegetables and then add salt and pepper.
  • 3Transfer vegetables to grill and cook over medium heat until tender, usually about ten minutes. Place cooked vegetables back in casserole dish and serve warm.
