I've noticed that my supermarket has been replacing "good old yogurt" with the pricier, richer "Greek Style". I was reluctant to give this newcomer a try, but finally caved and incorporated it into my Green Goddess Salad Dressing, replacing the sour cream with the Greek yogurt. I was impressed. It's quite good. And very rich.

Ingredients

  • 6 ounces plain fat free greek yogurt
  • 1/2 cup light mayonnaise
  • 1 - small scallion chopped
  • 1 tablespoon lemon juice
  • 1/2 teaspoon tabasco sauce
  • 1/2 teaspoon anchovy paste
  • 1 clove garlic chopped
  • 1 tablespoon italian parsley chopped

How To Make greek yogurt green goddess dressing

  • Step 1
    Place all ingredients except parsley in a blender or food processor and process until smooth. Add parsley and whirl until the mixture becomes a light green color.
  • Step 2
    Serve on your favorite salad. My recommendation is Bibb lettuce, sliced cucumbers, grape tomatoes, crumbed blue cheese, scallions, homemade croutons and hard boiled eggs. A little bacon would be nice too.
