You've heard of "Newman's Own." Well, this is "Ellen's Own," and I just created it from things I had in the fridge. I had planned a nice salad for dinner, along with some soup, and realized I didn't have much in the way of salad dressing. Rather than rush to the store, I created this yummy dressing for two.

NOTE: This recipe is completely tweakable and can be doubled, tripled, quadrupled--well, you get the idea! Enjoy on your salad or as a dip with crackers.
