This is my recipe for Russian Dressing. It has many of the usual suspects, when it comes to ingredients, and one or two others that give it its distinct flavor. A few years ago, I added some freshly chopped tarragon, and never looked back. But, tarragon is a distinctive spice, and some people do not like the taste of it, so I made it an optional ingredient. I will just say this... If you like Russian dressing, you will LOVE this version. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 1 tablespoon dehydrated onions, crushed to a powder
  • 1 tablespoon yellow onions, grated, and minced
  • 1 cup mayonnaise, plain variety, and homemade, if possible
  • 2 tablespoons chili sauce, homemade, if possible
  • 2 tablespoons ketchup, homemade, if possible
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon freshly chopped parsley
  • 2 - 3 teaspoons horseradish
  • 1 teaspoon hot sauce, i use frank’s
  • 1 teaspoon worcestershire sauce, homemade, if possible
  • - salt, kosher variety, to taste
  • OPTIONAL ITEMS
  • 1 tablespoon freshly chopped tarragon

    I am always attempting to make things homemade, and for this recipe, I am using several homemade items.     This recipe should last for 2 – 3 weeks in fridge. Just make sure it is in a tightly-sealed, non-reactive jar. So, make just enough to last for 2 or so weeks.

    I love the addition of the chopped tarragon; however, not everyone is a fan of that flavor, so I made it an optional item.

    Gather your Ingredients (mise en place).
  • Step 6
    Grind the dehydrated onions into a powder.
  • Step 7
    Grate and mince the onion.
  • Step 8
    Add all the ingredients together (except the salt), to a bowl, and whisk to combine.

    Add a bit of salt at a time, and then whisk and sample, until you achieve the desired taste.

    PLATE/PRESENT

    Seal tightly in a non-reactive jar, and keep in the fridge until ready for use. Enjoy

    Keep the faith, and keep cooking.
