A delicious veggie sammie made with the letters M,O,P,T,A of the alphabet for this week's sammie challenge...M-mushoooms,O-onions, P-peppers, T-tomatoes & A-arugula. I know whatcha saying...she figured out how to make what should have been a totally healthy sammie a "fatty & yummy" sammie, well you are correct and it was so worth it. Don't beat me up too bad because I did have my veggies..LOL This is healthy to the eyes. Cooking with Passion,sw:)

Ingredients

  • 8 slices roasted red peppers
  • 8 ounces portabello mushrooms, sliced
  • 1 large red onion, sliced
  • 2 medium green tomatoes, sliced
  • 8 slices asiago cheese
  • 1 cup whole buttermilk
  • 1 cup cornmeal mix
  • 2 tablespoons greek seasoning, divided
  • 1/2 cup mayo
  • 1 tablespoon pesto, heaping
  • 2 teaspoons tomato paste
  • 4 tablespoons olive oil, extra virgin, divided
  • 2-3 ounces arugula**toss with 1 tbsp of olive oil 1 tsp of greek seasoning**
  • 4 - ciabatta rolls, sliced and brushed with 2 tbsp of olive oil

How To Make deep fried veggie panini

  • Step 1
    heat your fryer to 350 degrees. in a small bowl combine milk, sriracha and greek seasoning. in amother small bowl, add cornmeal mix and greek seasoning. dredge peppers and tomates in milk then seasoned cornmeal mix. deep fry until golden brown. in a heated skillet add 2 tbsp olive oil, saute mushrooms until golden brown add onions and continue to fry until the onions turn golden brown.
  • Step 2
    in a small bowl combine, mayo, tomato paste & pesto. Build your Sammie: spread mayo mixture on slice bread, followed by tomatoes, cheese, mushrooms, onions, peppers & arugula salad. in heated grill pan place down sammies, grill until golden brown and cheese begans to melt. flip once. if using a panini grill, no flipping necessary
