Ingredients

  • 2 tablespoons olive oil
  • 2 teaspoons minced onion
  • 1 tablespoon hot curry powder
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon toasted cumin seeds, ground
  • 1/2 teaspoon ground turmeric
  • 1 pinch cayenne pepper
  • - ground white pepper, to taste
  • 1 cup real mayonnaise (not salad dressing)

How To Make curry mayonnaise

  • Step 1
    Heat oil in a small saute pan over medium-low heat. Add onion and cook until it is limp, about 7 minutes, stirring frequently. Add spices and pepper totaste. Cook, stirring constantly, for 2 minutes. Remove from heat and let cool.
  • Step 2
    Put mayonnaise in a small bowl and fold in spice mixture. Refrigerate, covered, until well chilled.
