This can be used with any salad but it was the complimenting dressing to the Avocado Quinoa Salad I posted from the Cooking Quinoa website.

  • 1/4 c
  • 1/4 c
    chia seeds
  • OR
    1/4 cup olive oil
  • 1/4 c
    lime juice
  • 1/4 tsp
    (or more) chipotle chili powder (or use 1/2 to 1 whole chipotle chili in adobo sauce)
  • 4 clove
    garlic, minced
  • 1/2 c
    fresh cilantro, chopped
  • 1 tsp
    ground cumin
  • 1 tsp
    sea salt

How to Make Chipotle Lime Dressing


  1. In a small bowl combine water and chia seeds. Whisk well and set aside for 10 to 15 minutes until a gel forms. (If you don’t have chia seeds you may substitute ¼ cup of olive oil.)
  2. Combine chia gel in a jar or blender and add remaining ingredients. Shake or process until combined.
