touch down taco dip
I don't recall where I got this recipe but I've had it for years and only recently did I make a couple changes to it. It's wonderfully delicious and it never lasts long, no matter what gathering you take it to.

Ingredients
- 1 can refried beans (16 oz)
- 8 ounces cream cheese, softened
- 1 cup sour cream, plus more for serving
- 2 tablespoons taco seasoning mix
- 2 cloves garlic, finely minced
- 2 ounces cheddar cheese, shredded
- 1 can bay shrimp, drained (4 oz)
- 1/2 cup sliced olives
- 1 medium tomato, diced
- 1/4 cup thinly sliced green onions
- 3 tablespoons thinly sliced fresh cilantro
- 1 small lime
- tortilla chips, for serving
How To Make touch down taco dip

Step 1Preheat oven to 350 degrees F. Spread refried beans over bottom of casserole dish. In medium bowl, combine cream cheese, sour cream and taco seasoning. Add minced garlic to cream cheese mixture and mix well. Spread evenly over beans. Sprinkle cheese over top. Bake 15-18 minutes or until hot.

Step 2Meanwhile, drain bay shrimp. Remove dip from oven and spread evenly over top of dip. Sprinkle toppings over the top including cilantro. Squeeze fresh lime juice over the top. Garnish with additional sour cream. Serve immediately.
