Ingredients
- 1 - envelope (1/4 oz) unflavored gelatin
- 3/4 cup milk, divided (1/2 c and 1/4 c)
- 3 ounces cream cheese, softened
- 1/2 cup grated cheddar cheese
- 1/4 cup pepper jack cheese, grated
- 1/4 cup finely chopped red onion
- 4 ounces diced green chilies
- 4 ounces chopped black olives
- 2 tablespoons chopped cilantro (or parsley, if you wish)
- 1 1/2 tablespoons lime juice
- 1 clove garlic, minced or pressed
- 2 teaspoons ground cumin (optional)
- 1/2 teaspoon salt

Step 1In large bowl, sprinkle gelatin over 1/4 cup milk. Let stand one minute

Step 2Scald remaining 1/2 cup milk. Stir into gelatin mixture, stirring until gelatin is completely dissolved.

Step 3Beat in cream cheese until smooth

Step 4Stir in sour cream and remaining ingredients

Step 5Chill 4 hours or until firm

Step 6To unmold, dip bottom of mold in hot water for a few seconds. Invert onto platter
