Super easy white bean dip (or Soup )

How to roast whole garlic bulb :Peel away the outer layers of the garlic bulb skin, leaving the skins of the individual cloves intact. Using a knife, cut off 1/4 to a 1/2 inch of the top of cloves, exposing the individual cloves of garlic.Place the garlic heads in a baking pan; muffin pans work well for this purpose. Drizzle a couple teaspoons of olive oil over each head, using your fingers to make sure the garlic head is well coated. Cover with aluminum foil. Bake at 400°F for 30-35 minutes, or until the cloves feel soft when pressed.

    of small white beans
  •   5 clove
    of garlic roasted with olive oil salt and pepper
  •   1 jar(s)
    small jar red roasted peppers
  •   2 Tbsp
    of lemon juice with 4 tablespoons water

How To Make

    Start by roasting garlic , I said 5 cloves but if you would like to roast the the whole bulb , go right ahead. Roasted garlic is great on or in just about anything !!Rinse The white beans in a strainer . Add the beans to blender . Open jar of roasted red peppers and spill out that juice then add the peppers to the blender . When the roasted garlic is done add that to the blender . I add 2 tablespoons of olive oil and the lemon juice mixture . Blend to smooth and creamy .

    Can be eaten as dip with veggies ,crackers or tortillas . Can also be warmed up for a yummy full of fiber soup !! I add Toasted whole grain bread cut in cubes that I "fry" in Best Life spray butter
