summer chillin' chickpea salad

Gotta love a hot summer day when you don't want to cook but just want to eat something light. This is it! It is a flavorful mix with fresh from the garden veggies & herbs...so refreshing and perfect for a summer afternoon out chillin' by the pool or relaxing in the shade paired up with some delicious mango iced tea!!!

Ingredients

  • 2 bunches parsley,chopped
  • 1 bunch cilantro, fresh, chopped
  • 1/2 small onion
  • 2 cans chick peas, drained & rinsed
  • 1 can cannelini beans, drained & rinsed
  • 12 - 15 small chery tomatoes, sliced or diced
  • 2 - 3 small garlic cloves, minced
  • a pinch or two of pepper
  • a pinch or two of salt
  • a pinch or two of beau monde
  • dash olive oil, extra virgin, several
  • dash lime juice, several to your taste
  • 8 - 12 ounces gruyere cheese, shredded or parmesan
  • 4 tablespoons muffuletta olive mix
  • 1 bag pita chips, tortilla chips or bread for dipping

How To Make summer chillin' chickpea salad

  • Step 1
    Rinse and drain your beans then set aside.
  • Step 2
    Chop up your herbs, dice your onions, slice your fresh tomatoes, mince your garlic. Add all to a bowl and toss gently. Add your olive oil to your liking, then the lime juice. Add your olive mix and gruyere and toss some more. Add a little salt, pepper, beau monde and taste again to see how you like it. Adjust to your taste.
  • Step 3
    Pour into a serving bowl, add your pita chips, tortilla chips or bread that you are serving it with to the side and your ready to eat.
