- 2 tablespoons red wine vinegar
- 3 cloves garlic, minced
- 1 tablespoon fresh mint, minced
- 1 cup sour cream, fat-free

Step 1defrost and drain spinach, press out all the water until spinach is very dry. Combine all ingredients and refrigerate for 2 hours.
