side essentials: crumbled blue cheese dip
I cannot conceive of cooking up a batch of chicken wings, without having a bowl of crumbly blue cheese dip, to plunge them in. As a matter of fact, in some States, you can be fined and thrown in jail, just for leaving it off the menu. This recipe has traditional ingredients (blue cheese, to name one), and one or two other bits-and-bobs, to make it, shall we say, rather interesting. So, you ready… Let’s get into the kitchen.

- PLAN/PURCHASE
- 1/2 cup blue cheese, crumbled variety, about 2.5 ounces (70g)
- 1/4 cup sour cream
- 2 tablespoons mayonnaise
- 2 teaspoons lemon juice, freshly squeezed
- 1 teaspoon buttermilk powder
- 1 teaspoon frank’s hot sauce, or to taste
- 1 pinch cayenne pepper
- - salt, kosher variety, to taste
- - white pepper, freshly ground, to taste

Step 2When I am using this dip with chicken wings, I like adding the Frank’s Hot Sauce; however, if I am using if for another purpose (depending on the recipe), I usually leave it out.

Step 3Gather your Ingredients (mise en place).

Step 4Mix all the ingredients (except the blue cheese) in a bowl, and then fold in the blue cheese bits.

Step 5Chef’s Note: Do a final tasting for proper seasoning.

Step 6Cover with cling wrap, and allow to rest in the refrigerator for a few hours before using.
