2 cups hummus
Ingredients
- 1 - large sweet red peppers
- 1 can chickpeas, rinsed and drained
- 1 clove garlic
- 1/4 cup lemon juice
- 3 tablespoons tahini
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley
- 1 tablespoon lite soy sauce
- 1 1/2 teaspoons ground cumin
- 1/2 teaspoon ground red pepper
- 1/8 teaspoon salt
How To Make red pepper hummus

Step 1Cut peppers in half lengthwise; remove and discard seeds and membranes. Place peppers, skin side up, on a large baking sheet; flatten peppers with palm of hand. Broil 5 1/2 inches from heat for 15 to 20 minutes or til charred. Place peppers in ice water until cool. Remove from water; peel and discard skins.

Step 2In a food processor, process sweet pepper and remaining ingredients until smooth, stopping to scrape down sides. Cover and chill up to 5 days.
