yield 2 cups hummus

Ingredients For red pepper hummus

  • 1
    large sweet red peppers
  • 1 can
    chickpeas, rinsed and drained
  • 1 clove
    garlic
  • 1/4 c
    lemon juice
  • 3 Tbsp
    tahini
  • 2 Tbsp
    olive oil
  • 2 Tbsp
    fresh parsley
  • 1 Tbsp
    lite soy sauce
  • 1 1/2 tsp
    ground cumin
  • 1/2 tsp
    ground red pepper
  • 1/8 tsp
    salt

How To Make red pepper hummus

  • 1
    Cut peppers in half lengthwise; remove and discard seeds and membranes. Place peppers, skin side up, on a large baking sheet; flatten peppers with palm of hand. Broil 5 1/2 inches from heat for 15 to 20 minutes or til charred. Place peppers in ice water until cool. Remove from water; peel and discard skins.

    In a food processor, process sweet pepper and remaining ingredients until smooth, stopping to scrape down sides. Cover and chill up to 5 days.
